Kodiak Cakes Twist : Thiviyah's Remix Chocolate Strawberry Power Cake Muffins

This is my own personal remix of the original recipe you can find on the back of the Kodiak Cakes box. I improvised as well because I didn't have eggs or bananas at the same when I was making the recipe. It turned out delicious anyway. I will post the original recipe that I found on the back of the Kodiak Cakes box.
Thiviyah's Remix Chocolate Strawberry Power Cake Muffins

Makes 12 muffins (12g protein per 2 muffin serving).
Ingredients:
Original Recipe I found on the back of the Kodiak Cakes box:

  • 2 cups (500 mL) Power Cakes Mix
  • 1 Cup (250 mL) milk
  • 1 egg
  • 1/2 Cup (125 mL) brown sugar
  • 1/4 Cup (62 mL) soften butter (not melted)
  • 2 ripe bananas, mashed
  • 1 Tsp (5 mL) cinnamon
Optional: 1 Cup (250 mL) dark chocolate chips or chopped walnuts





My Remix Version:
  • 2 cups power cakes mix
  • 1 cup (250ml) Earth's Own Cashew Milk So Fresh Unsweetened vanilla flavored
  • 1 egg ( didn't have eggs so used a baking substitute 1/4 cup of unsweetened apple sauce = 1 egg, making the power cake muffins vegan)
  • 1/2 cup (125ml) brown sugar
  • 1/4 cup (62ml) softened butter (not melted) ( I used half of a 1/2 portioned butter, those ones already portioned in 1/2 cup portions for baking and easy use)
  • 10 Fresh ripe strawberries ( locally from Alberta) 
  • approx.1 tsp (5ml) cinnamon
  • 1 Tbsp OMG! Organic Meets Good Organic Raw Cacao Powder

Optional: 1 cup (250ml) dark chocolate chips or chopped walnuts ( I didn't have the dark chocolate chips so that's why I added the cacao powder to make it my own recipe & ran out of walnuts)
** Add 1 cup of chopped cashews instead.

Directions:

Combine all ingredients in a mixing bowl and blend until smooth. Fill greased muffin cups 3/4 full. Bake at 350°F (175°C) for 14-18 minutes or until golden brown and an inserted toothpick comes out slightly moist.
