Homemade Chewy Breakfast Bars


Ingredients:
2 cups oats (rolled or quick)
1 cup  raw almonds
1/4 cup sunflower seeds
1 cup pitted dates 
1/4 cup chopped dried apricots or any dry fruits you prefer
1/4 cup honey

Directions:
1. Preheat oven to 375°F (190°C) and line a baking dish with parchment paper.  Add the oats, almonds and sunflower seeds on a baking sheet. Bake for 5-7 minutes until lightly toasted.
2. While the oat mixture is toasting in the oven , in a blender or food processor add the dates until they are smooth and forms into a ball. Add date mixture into a large bowl.
3. Transfer the oat mixture to the bowl. Add the remaining ingredients and mix until throughly combined.
4. Transfer the mixture into the prepared baking dish and press the mixture down firmly into a even layer. 
5. Place the baking dish in the refrigerator for atleast 30 minutes to allow the bars to set.
6. Once the bars are set fully, cut into even squares. You can serve them immediately or store them in the refrigerator for up to 5 days in a airtight container.
